Paya is a platform for Chef Niven Patel to pay homage to the insular cuisines of the Caribbean, Southeast Asia, and Spain’s islands, where he and Mo have either worked or visited extensively. Chef Niven’s dishes incorporate ingredients he grows at Rancho Patel, complemented by vibrant wines and tropical, farm to glass cocktails.

NiMo

NiMo Coastal Mediterranean is a depiction of the bond formed by the partners Chef Niven and Mo over the years. It’s the story of Mo who grew up in the Mediterranean between Syria and Spain, told through the cuisine of his business partner Chef Niven Patel. The menu is a culinary journey across the Mediterranean that includes dishes inspired by Syrian, Greek, and Spanish cuisine. Italy takes center stage with various pastas and wood fired pizza, a nod to Chef Niven’s time in Florence.

Ghee Indian Kitchen​

Ghee puts seasonal and contemporary spins on traditional Indian fare. Ghee, a clarified butter that originated in Ancient India, means “pure,” a philosophy that is carried through the warm and hospitable dining room. With an intent to bring home-cooking to a restaurant setting, the menu focuses on long-prep creations. Ghee’s culinary excellence earned it three semi-finalist nominations for the James Beard award.

The design, created to evoke conversation, is exemplified by the Library, a tastefully unique private dining room.
